Restaurant Style Cilantro Lime Rice

  • 1 cup long-grain white rice rinsed until the water runs clear
  • 2 cup water
  • 1 lime zested and juiced
  • ¼ cup fresh cilantro finely chopped
  • 1 tbsp olive oil
  • ½ tsp salt plus more to taste

  • Rinse the rice in a fine mesh sieve under cold water until the water runs clear, then drain.
  • Combine the rice, water, and salt in a medium saucepan and bring to a boil over medium-high heat.
  • Reduce the heat to low, cover, and simmer for 15 to 20 minutes, until the water is absorbed. Do not lift the lid.
  • Remove from the heat and let the rice rest, covered, for 5 minutes.
  • Fluff with a fork, then stir in the lime juice, zest, cilantro, and olive oil. Adjust the salt and serve.

Notes

Refrigerate cooked rice within one hour and eat within 3 to 4 days. Reheat with a splash of water until steaming hot. Nutrition is an estimate per serving of about 3/4 cup.
