Roasted Broccoli with Toasted Breadcrumbs

Main ingredients

  • 1 large broccoli or 2 small (cut into florets)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ½ cup homemade breadcrumbs or panko chunkier the better
  • 3 tbsp finely grated Parmesan optional
  • 1 tbsp extra olive oil
  • Salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a bowl, toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper.
  • Spread the seasoned broccoli on a baking tray and roast in the oven for about 10 minutes, or until it is slightly softened and beginning to brown.
  • Meanwhile, combine the breadcrumbs, Parmesan cheese (if using), 1 tablespoon of olive oil, and a pinch of salt in a small bowl.

Cooking

  • When the broccoli is almost done, take the tray out of the oven. Move the broccoli to one side of the tray, creating space for the breadcrumbs.
  • Spread the breadcrumb mixture over the empty side of the tray.
  • Roast both the broccoli and breadcrumbs for about 12 minutes, keeping an eye on the breadcrumbs so they don’t burn.
  • Once everything is golden brown, pile the roasted broccoli and toasted breadcrumbs into a serving bowl.

Notes

Serve warm as a side dish to your favorite main course. Great with grilled chicken, fish, or as part of a vegetarian meal. You can sprinkle extra Parmesan on top for added flavor before serving.
