Roasted Broccolini with Tahini Sauce

Ingredients
  

For the Broccolini

  • 500 g broccolini, ends trimmed Approximately 3 standard bunches in Australia
  • 1 tbsp extra virgin olive oil
  • ¼ tsp salt for roasting
  • ¼ tsp pepper for roasting
  • 1 clove garlic, finely minced

For the Tahini Sauce

  • ¼ cup tahini
  • 2.5 tbsp water
  • 1.5 tsp honey
  • 1 tbsp lemon juice
  • ½ clove garlic, pressed or grated to make sauce smooth
  • ¼ tsp salt for sauce
  • ¼ tsp pepper for sauce

For Serving

  • ¼ cup flaked almonds, pine nuts or pistachios, toasted for topping

Instructions
 

Preparation

  • Preheat your oven to 220°C/425°F (200°C fan).
  • In a bowl, mix the tahini sauce ingredients until well combined, achieving a smooth consistency. Set aside for 15 minutes.
  • Place the broccolini on a baking tray. Drizzle with olive oil, then sprinkle with salt, pepper, and minced garlic.

Cooking

  • Roast the broccolini in the oven for 12-15 minutes until the ends of the florets are dark brown and crunchy, while the stems are just tender.
  • If you prefer softer broccolini, lower the oven temperature to 180°C/350°F and roast for 20 minutes.
  • Once done, transfer the broccolini to a serving plate and allow it to cool until warm.
  • Drizzle the tahini sauce over the top and sprinkle with toasted almonds or nuts before serving.

Notes

Enjoy warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispiness.
