- 1 15 oz can chickpeas, drained and rinsed
- ½ cup roasted red peppers jarred or homemade
- ¼ cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic
- 2 tablespoons olive oil
- ½ teaspoon ground cumin
- Salt to taste
- Water as needed for desired consistency
Add chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, and cumin to a food processor.
Blend until smooth, adding water 1 tablespoon at a time to reach desired consistency.
Season with salt to taste and blend again.
Transfer to a bowl and drizzle with extra olive oil, paprika, or chopped herbs if desired.
