Ingredients
  

  • 1 15 oz can chickpeas, drained and rinsed
  • ½ cup roasted red peppers jarred or homemade
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 2 tablespoons olive oil
  • ½ teaspoon ground cumin
  • Salt to taste
  • Water as needed for desired consistency

Instructions
 

  • Add chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, and cumin to a food processor.
  • Blend until smooth, adding water 1 tablespoon at a time to reach desired consistency.
  • Season with salt to taste and blend again.
  • Transfer to a bowl and drizzle with extra olive oil, paprika, or chopped herbs if desired.
  • Serve with pita, veggies, or crackers.
