Ingredients
  

Turkey Preparation

  • 1 whole turkey (12-14 pounds) Make sure to thaw if frozen
  • 1 cup unsalted butter, room temperature For rubbing on the turkey

  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1-2 handfuls fresh herbs (sage, rosemary, thyme) Use whatever is fresh and available

Preparation

  • Thaw the turkey completely if it's frozen.
  • Remove the neck and giblets from the turkey cavity.
  • Pat the turkey dry with a towel.
  • In a bowl, mix the butter with chopped garlic, salt, pepper, and herbs found in your fridge.
  • Rub the butter mixture all over the turkey, especially under the skin.

Cooking

  • Preheat the oven to 325°F (163°C).
  • Place the turkey on a rack in a roasting pan.
  • Roast the turkey for approximately 15 minutes per pound.
  • Baste the turkey every 30 minutes but avoid frequent opening of the oven door.
  • Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).
  • Let the turkey rest for at least 30 minutes before carving.

Notes

You can prep the turkey a day ahead by rubbing the butter and refrigerating it. Adding lemon or apple in the cavity enhances the flavor. For a twist, use different herbs or try variations like Cajun seasoning or bacon on top.
