Ingredients

For the Turkey

  • 1 whole Bone-in, skin-on turkey breast For maximum flavor
  • ½ cup Softened butter For rubbing under the skin and on top
  • 3 cloves Garlic Minced
  • 1 tablespoon Salt To taste
  • 1 tablespoon Black pepper To taste
  • 2 tablespoons Fresh herbs (rosemary, thyme, etc.) Chopped

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Place the turkey breast on a cutting board. Gently slide your fingers under the skin to loosen it.
  • Rub half of the softened butter under the skin, massaging it into the meat. Use the remaining butter to coat the outside of the turkey.
  • Sprinkle the minced garlic, salt, pepper, and chopped herbs generously over the turkey.

Cooking

  • Place the turkey breast in a roasting pan, and roast uncovered in the oven.
  • Use a meat thermometer to check for doneness; the turkey should reach an internal temperature of 160°F (71°C).
  • Once cooked, remove from the oven and let the turkey rest for at least 10 minutes before slicing.
  • If the skin isn’t golden enough, place it under the broiler for a minute or two.

Notes

For a slow cooker version, place seasoned turkey in the slow cooker and cook on low for 5-6 hours, checking for an internal temperature of 165°F (74°C). Use drippings for gravy.
