Ingredients
  

  • 3 medium turnips peeled and cubed
  • 3 large carrots peeled and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme or rosemary optional
  • 1 tablespoon balsamic vinegar or lemon juice optional, for finishing

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Prepare vegetables: Peel and chop turnips and carrots into uniform pieces.
  • Season: In a bowl, toss vegetables with olive oil, salt, pepper, and optional herbs.
  • Roast: Spread evenly on a baking sheet in a single layer. Roast for 25–30 minutes, stirring halfway through, until golden and tender.
  • Finish and serve: Drizzle with balsamic vinegar or lemon juice before serving, if desired. Serve warm.
