  • 2 cups water or broth For cooking the rice.
  • 1 can Rotel tomatoes and chilies Adjust spicy level according to preference.
  • 1 tablespoon cooking oil For toasting the rice.

Aromatics and Seasonings

  • 1 small onion, chopped Adds depth of flavor.
  • 2 cloves garlic, minced Enhances flavor with aroma.
  • 1 teaspoon ground cumin For authentic Mexican flavor.
  • 1 teaspoon chili powder
  • to taste salt and pepper To season the dish.

Instructions
 

Preparation

  • Heat the cooking oil in a large skillet over medium heat.
  • Add the rice and stir continuously until it’s lightly toasted and golden brown.
  • Stir in the chopped onion and minced garlic, cooking until soft.
  • Add the cumin, chili powder, salt, and pepper, mixing well.
  • Incorporate the Rotel tomatoes and water (or broth) into the skillet, stirring gently.

Cooking

  • Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes.
  • Check the rice periodically, stirring gently to prevent sticking.
  • Once the rice is tender and the liquid is absorbed, fluff with a fork and serve.

Notes

For added nutrition, include protein sources like chicken, beef, or beans. Add in diced vegetables or cheese for a cheesy version.
