  • 1 pound ground beef (or ground turkey or sausage) You can substitute with any ground meat.
  • 1 small onion, diced
  • 1 can Rotel tomatoes Choose mild or hot based on spice preference.
  • 8 oz pasta (any type) Use whole wheat or gluten-free options if desired.
  • 1 cup shredded cheese Pepper jack can be used for a spicier flavor.
  • Salt and pepper to taste
  • 1 teaspoon garlic powder

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion and cook until it becomes translucent.
  • Add the ground beef, cooking until it is nicely browned.
  • Stir in the Rotel tomatoes, garlic powder, salt, and pepper, mixing well.
  • Cook the pasta according to package instructions, then drain it.
  • Combine the cooked pasta with the meat mixture, stirring until everything is well mixed.
  • Top with shredded cheese and let it melt before serving.

Notes

Serve hot with extra cheese, a side salad, or tortilla chips. For added zing, garnish with chopped cilantro or jalapeƱos. Store leftovers in an airtight container for up to 3-4 days.
