  • 1 lb Round steak, 1-inch thick, USDA Choice or Prime Choose a steak that is deep red and has little fat.
  • 1 tbsp Extra-virgin olive oil Use a mild, fresh tasting brand.
  • 1 tbsp Unsalted butter Adds richness without excess sodium.
  • 2 cloves Garlic, minced Fresh is preferred for flavor.
  • 2 sprigs Fresh rosemary Adds aromatic flavor.
  • 1 tbsp Kosher or sea salt Enhances natural juices.
  • 1 tsp Coarse black pepper For flavor without bitterness.

Instructions
 

Preparation

  • Pat the round steak dry with paper towels and season both sides with salt and pepper.
  • If desired, prepare a marinade or seasoning blend before cooking.

Cooking

  • Heat a cast iron skillet over high heat until very hot.
  • Add olive oil and immediately place the steak in the skillet.
  • Sear the steak for 3-4 minutes on each side to achieve a golden crust.
  • In the last 2 minutes of cooking, baste the steak with melted butter, minced garlic, and fresh rosemary.

Finishing Touches

  • Remove the steak from the skillet and let it rest for 5 minutes before slicing against the grain.
