  • 1 bunch Kale, torn into pieces Use even the leaves that look a little less fresh.
  • 1 tablespoon Olive oil For sautéing.
  • 1 pinch Salt To taste.
  • 1 lemon Lemon, juiced For freshness.
  • 1 pinch Red pepper flakes Optional, for a bit of heat.

Preparation

  • Heat olive oil in a large pan over medium heat.
  • Add a pinch of salt to the oil.
  • Toss in torn kale leaves.
  • Cook until they are wilted and bright green, about 5 minutes.
  • Squeeze in lemon juice and sprinkle with red pepper flakes if using.

Notes

This sautéed kale can be served on its own, added to sandwiches, or mixed into pasta. Leftovers can be stored in an airtight container in the fridge for 2-3 days. You can also freeze it for later use in soups or smoothies.
