Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 1 15 oz can diced tomatoes
  • 2 cups mixed frozen vegetables corn, peas, carrots, green beans
  • 1 cup potatoes diced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil optional, for browning beef

Instructions
 

  • In a large pot over medium heat, cook ground beef until browned. Drain excess fat.
  • Add diced onion and garlic, sauté for 2–3 minutes until fragrant.
  • Pour in beef broth and diced tomatoes. Stir in potatoes, mixed vegetables, and Italian seasoning.
  • Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, or until potatoes are tender.
  • Season with salt and pepper to taste.
  • Serve hot with bread or crackers.
