Ingredients

Main Ingredients

  • 1 lb Ground Beef (or ground turkey or plant-based crumbles)
  • 4 medium Red Potatoes (or riced cauliflower for low-carb)
  • 1 medium Onion (diced, caramelized)
  • 1 cup Shredded Cheese (Colby Jack or pepper jack)
  • ½ cup Mayo (or Greek yogurt)
  • ¼ cup Ketchup (low-sugar)
  • 1 tbsp Mustard (Dijon for a twist)
  • 1 tbsp Cajun Seasoning (adjust to taste)
  • 1 cup Pickles (or cucumbers)
  • 2 cups Lettuce (any mix of leafy greens)

Instructions

Cooking

  • Boil or bake the red potatoes until tender. If using riced cauliflower, sauté until cooked through.
  • In a pan, cook the ground beef (or alternative) over medium heat, seasoning with Cajun seasoning as it browns.
  • In a separate skillet, sauté the diced onions in a little oil until they are golden brown and soft.

Assembly

  • In a bowl, layer the cooked potatoes, browned meat, caramelized onions, shredded cheese, and fresh lettuce.
  • Drizzle mayo and ketchup over the top, then add pickles or cucumbers. Toss gently to combine all flavors.

Notes

Use a mix of cheeses for a flavorful boost. Add grilled vegetables for extra nutrients and flavor. Customize the seasoning based on your spice preference; more Cajun seasoning can bring more heat. If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat before serving. For best results, keep the sauce and toppings separate to maintain freshness.
