  • 1 box white cake mix (15.25 oz)
  • 3 large egg whites
  • 1 cup water
  • cup vegetable oil
  • 1/4-1/2 teaspoon mint or peppermint extract Adjust based on preferred mint flavor
  • ½ teaspoon green food coloring Can be omitted if not available

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  • In a large mixing bowl, combine the cake mix, egg whites, water, vegetable oil, mint extract, and green food coloring. Mix until well combined.
  • Fill each cupcake liner about 2/3 full with the batter.
  • Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before frosting.

Notes

Serve with powdered sugar, chocolate syrup, whipped cream, or a cherry on top for a festive look. Store leftovers in an airtight container at room temperature for up to three days, or refrigerate for up to a week. For longer storage, freeze wrapped tightly for up to three months.
