Preparation

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add the shrimp, paprika, salt, and pepper. Cook until shrimp are pink and opaque, about 2-3 minutes.
  • Stir in the broccoli and cook for an additional 3-4 minutes until tender.
  • Combine the cooked pasta with the shrimp and broccoli mixture. Toss to combine.

Notes

Make sure not to overcook the shrimp; they should be cooked just until pink and opaque. Feel free to add other veggies like bell peppers or snap peas for extra color and nutrition. For a bit of spice, consider adding a pinch of red pepper flakes when cooking the shrimp. Store any leftovers in an airtight container in the refrigerator for 2-3 days.
