Ingredients
  

For the Shrimp Patties

  • 2 pounds shrimp (peeled, deveined, and patted dry)
  • 1 small yellow onion (finely diced)
  • 2 tablespoons unsalted butter (at room temperature)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon water
  • ¾ teaspoon kosher salt
  • teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • 3 pieces scallions (finely chopped)
  • 1 handful fresh parsley (finely chopped)

For Frying and Coating

  • 2 cups vegetable oil (for frying)
  • ½ cup all-purpose flour
  • 1 large egg (beaten)
  • 1 cup panko bread crumbs

For the Dressing

  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon kosher salt

For Assembling

  • 4 pieces brioche buns or regular burger buns (split and toasted)
  • 12 slices Maasdam cheese or mozzarella cheese
  • 2 pieces tomatoes (sliced)
  • 1 cup cabbage (shredded)

Instructions
 

Preparation of Shrimp Patties

  • In a bowl, combine the shrimp, diced onion, butter, flour, water, salt, black pepper, cumin, cayenne pepper, garlic powder, scallions, and parsley. Mix everything well.
  • Form the mixture into patties and set aside.

Prepare the Dressing

  • In another bowl, mix together the mayonnaise, Greek yogurt, garlic powder, Italian seasoning, and kosher salt. Set this dressing aside for later.

Assembling and Cooking

  • Heat the vegetable oil in a skillet over medium heat.
  • Dip the patties into the flour, then the beaten egg, and finally coat them with panko bread crumbs.
  • Fry the patties in the hot oil until they are golden brown and cooked through.
  • Toast the buns and layer on your cooked shrimp patty, cheese, tomatoes, cabbage, and dressing.

Notes

For best results, let the shrimp mixture chill in the fridge for about 30 minutes before cooking. Use completely dry shrimp to avoid soggy patties. You can add toppings like lettuce or avocado and pair with sweet potato fries or a fresh salad.
