- 12 oz pasta penne or linguine
- 1 lb large shrimp peeled and deveined
- 3 tablespoons butter
- 3 tablespoons olive oil
- 4 garlic cloves minced
- ¼ teaspoon red pepper flakes optional
- ½ cup dry white wine or chicken broth
- Juice of 1 lemon
- ¼ cup chopped parsley
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Cook pasta according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil and butter over medium heat. Add garlic and red pepper flakes, and sauté for 1 minute.
Add shrimp and cook for 2–3 minutes until just pink. Remove shrimp and set aside.
Deglaze the pan with white wine or broth and stir in lemon juice. Let simmer for 2–3 minutes.
Combine the pasta, shrimp, sauce, parsley, and half of the Parmesan. Mix well and transfer to a greased baking dish.
Top with mozzarella and the remaining Parmesan cheese.
Bake for 15–20 minutes, or until cheese is melted and bubbly.
Garnish with additional parsley and serve hot.
