Ingredients
  

  • 12 oz pasta penne or linguine
  • 1 lb large shrimp peeled and deveined
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 4 garlic cloves minced
  • ¼ teaspoon red pepper flakes optional
  • ½ cup dry white wine or chicken broth
  • Juice of 1 lemon
  • ¼ cup chopped parsley
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook pasta according to package directions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil and butter over medium heat. Add garlic and red pepper flakes, and sauté for 1 minute.
  • Add shrimp and cook for 2–3 minutes until just pink. Remove shrimp and set aside.
  • Deglaze the pan with white wine or broth and stir in lemon juice. Let simmer for 2–3 minutes.
  • Combine the pasta, shrimp, sauce, parsley, and half of the Parmesan. Mix well and transfer to a greased baking dish.
  • Top with mozzarella and the remaining Parmesan cheese.
  • Bake for 15–20 minutes, or until cheese is melted and bubbly.
  • Garnish with additional parsley and serve hot.
