Ingredients
  

For the marinade

  • 1 lb flank steak or skirt steak
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste Adjust according to preference

For the quesadilla

  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend) You can experiment with different types
  • 1 bell pepper, sliced
  • 1 onion, sliced

Instructions
 

Prepare the Marinade

  • In a bowl, mix the olive oil, lime juice, salt, and pepper. Marinate the steak for at least 30 minutes.

Cook the Steak

  • Grill or pan-sear the marinated steak to your desired doneness. Let it rest before slicing.

Sauté the Vegetables

  • In the same pan, sauté the bell pepper and onion until softened.

Assemble the Quesadilla

  • Place one tortilla in the pan, layer with cheese, sliced steak, and sautéed vegetables.
  • Top with another tortilla and cook until golden brown on both sides and the cheese is melted.
  • Cut into wedges and serve hot.

Notes

Serve with salsa, guacamole, or sour cream on the side. If you have leftovers, store in an airtight container in the fridge for 2-3 days. Reheat in a skillet for best results.
