Ingredients
  

  • 1 tablespoon olive oil
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • ½ cup chicken broth
  • 1 package 9 oz refrigerated cheese tortellini
  • ½ cup heavy cream
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil or parsley for garnish (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through (about 5–6 minutes).
  • Add garlic and cook for 1 minute until fragrant.
  • Stir in diced tomatoes (with juice), chicken broth, and tortellini. Bring to a simmer.
  • Cover and cook for 5–6 minutes, or until tortellini is tender.
  • Stir in heavy cream, mozzarella, Parmesan, and Italian seasoning.
  • Simmer uncovered for 2–3 minutes, allowing the sauce to thicken slightly.
  • Garnish with fresh herbs if desired, and serve hot.
