Ingredients
  

Meat Mixture

  • 1 lb ground beef or turkey Choose your preferred meat.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Vegetables and Liquids

  • 1 cup frozen mixed vegetables Feel free to swap in any vegetables on hand.
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Pasta and Cheese

  • 2 cups cooked egg noodles or pasta Swapping for rice or quinoa is an option.
  • 1 cup shredded cheese (optional) Skip for a dairy-free option.

Instructions
 

Preparation

  • In a skillet, brown the ground beef or turkey with the onion and garlic. Drain excess fat.
  • Transfer the meat mixture to the slow cooker.
  • Add the mixed vegetables, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir in the cooked noodles.
  • If desired, sprinkle cheese on top and cover until melted.

Serving

  • Serve warm, optionally with crusty bread or a simple salad.

Notes

Brown the meat well before adding it to the slow cooker for extra flavor. This casserole is best served warm and makes for good leftovers, lasting 3-4 days in the fridge or up to 3 months in the freezer.
