Ingredients

  • 2 lb chuck roast fat trimmed
  • ½ cup red onion sliced
  • ⅓ cup balsamic vinegar
  • ½ cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic minced
  • ¼ tsp dried thyme or 1 teaspoon chopped fresh thyme
  • ¼ tsp black pepper
  • ⅓ cup low-sodium beef broth
  • 1 tbsp cornstarch for thickening the sauce

Instructions
 

Cooking

  • Place the roast in the slow cooker and scatter the sliced onions over and around it.
  • Whisk the balsamic vinegar, tomato sauce, Worcestershire, garlic, pepper, and thyme together and pour over the roast.
  • Pour the broth around the meat.
  • Cover and cook on low for 7 to 8 hours, until fork tender.
  • Whisk the cornstarch with about 1/2 cup of the hot cooking liquid until smooth, then stir it back into the slow cooker and cook a few more minutes until slightly thickened.
  • Break the roast into large pieces and serve with the balsamic sauce.

Notes
