  • 1 lb lean ground beef ground turkey or chicken also works
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (14.5 oz) diced tomatoes with their juice
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp chili seasoning
  • 1 cup low-sodium beef broth
  • ½ tsp salt plus pepper to taste

Instructions
 

Cooking

  • Brown the ground beef in a large skillet over medium heat until no longer pink, then drain off the excess fat.
  • Transfer the beef to the slow cooker and add the beans, tomatoes with their juice, onion, garlic, chili seasoning, broth, salt, and pepper.
  • Stir well. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • For a thicker chili, remove the lid for the last hour of cooking.
  • Taste, adjust the seasoning, and serve with your favorite toppings.

Notes

Ground beef should reach 160 degrees F. Refrigerate leftovers within two hours and eat within 4 days, or freeze in portions. Nutrition is an estimate per serving of about 1 1/4 cups.
