Ingredients
  

Main Ingredients

  • 2 pounds ground beef Lean is preferred but any will do.
  • 1 large onion, chopped
  • 3 cloves garlic, minced Add more for extra garlic flavor.
  • 2 cans kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 cans diced tomatoes (14 oz each)
  • 1 can tomato sauce (about 15 oz)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika Enhances flavor.
  • 1 teaspoon salt
  • pepper to taste
  • 1 green bell pepper, chopped Add red for added sweetness.
  • 1 teaspoon sugar Balances acidity.
  • ½ cup beef broth or water (optional) For thinner chili.

Instructions
 

Preparation

  • Chop all vegetables and prepare all ingredients.
  • Brown the ground beef in a skillet before adding it to the slow cooker (optional but recommended).
  • Add all ingredients into the slow cooker.

Cooking

  • Set the slow cooker on low for 6-8 hours.
  • Remove the lid for the last 30 minutes to thicken the chili if necessary.

Serving

  • Serve hot from the slow cooker with desired toppings.

Notes

Chili can be served with cornbread or over rice. Adjust spice levels with more or fewer peppers and chili powder. It's also great to make a toppings bar for serving.
