- 10 baby red potatoes quartered
- 4 large carrots peeled and cut into matchstick pieces
- 1 onion peeled and cut into bite-sized pieces
- 4 cups water
- 1 4-pound corned beef brisket with spice packet
- 6 ounces beer
- ½ head cabbage coarsely chopped
Prepare Vegetables: Place the potatoes, carrots, and onion into the bottom of a slow cooker. Add 4 cups of water.
Add Meat: Place the corned beef brisket on top of the vegetables. Pour the beer over the brisket and sprinkle the contents of the spice packet over the top.
Cook: Cover and cook on high for 7 hours.
Add Cabbage: Stir in the chopped cabbage and cook for an additional hour.
Serve: Remove the meat and vegetables from the slow cooker. Slice the corned beef against the grain and serve with the vegetables.
