  • 3 lbs beef chuck roast Cut into large chunks for even cooking
  • 1.5 lbs baby potatoes Halved
  • 1 onion Sliced (optional)
  • 3 carrots chopped Optional for extra texture

Garlic Butter Sauce

  • 1 cup butter Melted
  • 6 cloves garlic Minced
  • 1 tsp Italian herbs
  • ½ tsp crushed red pepper flakes For heat
  • ¼ cup parsley Chopped

Other Ingredients

  • 2 cups beef broth

Preparation

  • Season the beef chuck roast with salt and black pepper.
  • Optionally, sear the beef in olive oil for added flavor.
  • Layer the halved baby potatoes in the slow cooker.
  • Add the beef on top of the potatoes.
  • If desired, add sliced onions and chopped carrots.

Garlic Butter Sauce Preparation

  • Melt the butter and mix in minced garlic, Italian herbs, crushed red pepper flakes, and chopped parsley.
  • Pour the beef broth over the beef and potatoes.
  • Drizzle the garlic butter sauce on top and gently toss to mix.

Cooking

  • Cover the slow cooker and set it on LOW for 7-8 hours or HIGH for 4-5 hours until the beef is tender and the potatoes are soft.
  • For thick sauce, mash a couple of potatoes into the broth.
  • Serve warm and sprinkle with fresh parsley for garnish.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Substitute Yukon Gold potatoes with sweet potatoes for a healthier twist.
