  • 2 pounds chicken thighs (or breasts) Can use frozen chicken.
  • ½ cup honey Adjust the amount for desired sweetness.
  • ¼ cup soy sauce Low sodium recommended for less salt.
  • 4 cloves garlic, minced Garlic powder can be used as a substitute.
  • 1 tablespoon cornstarch For thickening the sauce, mix with cold water before adding.

Preparation

  • Place the chicken thighs or breasts in the slow cooker.
  • In a separate bowl, mix together the honey, soy sauce, and minced garlic.
  • Pour the mixture over the chicken in the slow cooker.

Cooking

  • Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
  • If the sauce is too thin at the end, whisk together additional cornstarch and water, then stir into the sauce and cook on high for another 20 minutes.

Notes

For added flavor, consider adding ginger or sriracha. You can also throw in vegetables like carrots or bell peppers during the last hour of cooking. For a crispy finish, broil the chicken for a few minutes after cooking.
