Main Ingredients
- 1 lb ground beef 80 percent lean
- 4 medium red potatoes cut into bite size pieces
- 1 medium onion diced
- 1 cup shredded Colby Jack or pepper jack cheese
- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tbsp yellow or Dijon mustard
- 1 tbsp Cajun seasoning
- 1 cup dill pickles chopped
- 2 cup chopped lettuce
- 1 tbsp olive oil
Cooking
Boil the potatoes. Simmer the potatoes in a large pot of salted water for 12 to 15 minutes until fork tender, then drain well.
Caramelize the onion. Cook the onion in the olive oil for about 12 minutes until soft and golden, then set aside.
Smash the beef. In a hot large skillet, press the beef flat with a sturdy spatula, add the Cajun seasoning, and cook 3 minutes without moving until a dark crust forms.
Chop and finish. Flip, cook 2 more minutes, chop into pieces, and cook until no pink remains at 160 degrees F. Drain most of the fat.
Mix the sauce. In a bowl, stir the mayonnaise, ketchup, and mustard until smooth.
Build the bowls. Layer lettuce, potatoes, beef, and onions, then top with cheese, pickles, and sauce.
Substitutions: Use riced cauliflower for the potatoes, ground turkey for the beef, or Greek yogurt for half of the mayonnaise.
Tips: Use a hot dry pan for the beef crust, and keep the cold toppings separate until serving.
Storage: Refrigerate the beef, potatoes, and onions for 3 to 4 days and reheat to 165 degrees F.
