  • ½ cup quinoa or couscous Optional for a more filling base.

Main Ingredients

  • 4 oz smoked salmon Preferably wild-caught for best flavor.
  • 1 medium avocado, sliced Adds creaminess and healthy fats.
  • 1 medium cucumber, sliced Provides a refreshing crunch.
  • 1 medium tomato, diced Adds sweetness to the salad.
  • ¼ medium red onion, thinly sliced For a zesty kick.
  • ¼ cup feta cheese, crumbled Adds a savory touch.

Salad Dressings

  • 3 tablespoons olive oil For the base of the dressing.
  • 1 tablespoon vinegar (red wine or balsamic) To complement the olive oil.
  • 2 tablespoons Dijon mustard For a homemade mustard dressing.
  • 1 tablespoon lemon juice To add tanginess.

Instructions
 

Preparation

  • In a large bowl, combine mixed greens and quinoa or couscous if using.
  • Slice smoked salmon and arrange on top of the greens.
  • Add sliced avocado, cucumber, tomato, and red onion.
  • Sprinkle crumbled feta cheese over the salad.

Dressing

  • In a small bowl, whisk together olive oil, vinegar, Dijon mustard, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.

Notes
