Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts (or thighs), cut into chunks
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ½ cup diced tomatoes (optional) You can omit if preferred.
  • 1 tsp paprika
  • 1 tsp dried thyme
  • ½ tsp cayenne pepper (adjust to taste) Use less for a milder dish.

Instructions

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and garlic, and sauté until the onion is translucent.
  • Add the chicken pieces to the skillet and cook until browned.
  • Pour in the chicken broth, heavy cream, and diced tomatoes if using.
  • Stir in paprika, thyme, and cayenne pepper.
  • Bring to a simmer, cover, and let cook for about 20-25 minutes, or until chicken is cooked through.
  • Serve over cooked rice.

Notes

Garnish with fresh herbs like parsley or green onions for added flavor. Pair it with a simple side salad or steamed vegetables. For extra flavor, marinate the chicken in spices or buttermilk before cooking. Adjust the cayenne pepper for desired spiciness. Let the mixture simmer uncovered for a thicker sauce.
