For the Casserole

  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 8 ounces spaghetti noodles Break in half for even cooking.
  • 1 can Rotel tomatoes with green chilies Adds spice and flavor.
  • 1 can cream of chicken soup Provides creaminess.
  • 2 cups sharp cheddar cheese, shredded Can substitute with other cheeses.
  • 1 teaspoon garlic powder For extra flavor.
  • 1 teaspoon onion powder Optional for added taste.
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper Adjust to taste.

Preparation

  • Preheat oven to 350°F (175°C).
  • Boil spaghetti noodles according to package instructions until al dente, drain and set aside.
  • In a large mixing bowl, combine shredded chicken, Rotel tomatoes, cream of chicken soup, half of the cheddar cheese, garlic powder, onion powder, salt, and pepper.
  • Fold in the cooked spaghetti until well mixed.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Top with remaining cheddar cheese.
  • Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until bubbly and golden.

Notes

This casserole can be made ahead of time and stored in the fridge or frozen for later use. To freeze, allow to cool, cover tightly, and label. Thaw overnight before baking. Add veggies like bell peppers or peas for an extra nutrition boost.
