Main Ingredients
- 8 oz sharp cheddar cheese freshly grated from a block
- 8 oz cream cheese softened
- 4 oz diced pimentos one jar, drained
- ½ cup mayonnaise
- 1 tsp black pepper
- ½ tsp garlic powder optional
- ¼ tsp Worcestershire sauce optional
- ¼ tsp hot sauce or a pinch of cayenne, optional
Cooking
Cream. Beat the softened cream cheese and mayonnaise in a large bowl until smooth.
Fold. Stir in the grated cheddar, pimentos, pepper, and any garlic powder, Worcestershire sauce, or hot sauce.
Taste. Taste and adjust the seasoning, keeping the spread thick but spreadable.
Chill. Cover and refrigerate for at least 1 hour so the flavors blend before serving.
Substitutions: Use pepper jack for a spicier spread, or reduced fat cream cheese for a lighter version.
Tips: Drain the pimentos on paper towels so extra liquid does not thin the spread.
Storage: Refrigerate in a sealed container for up to 4 days.
Nutrition does not include the optional garlic powder, Worcestershire sauce, or hot sauce.
