  • 1 cup long-grain white rice Use uncooked rice
  • 2 tablespoons oil For sautéing the rice
  • 1 small onion, finely chopped Optional, for added flavor
  • 1 clove garlic, minced Optional, for added flavor
  • 1 cup tomato sauce or fresh tomatoes blended with water For cooking the rice
  • 1 teaspoon salt For seasoning
  • 1 teaspoon cumin For seasoning
  • 1 pinch chili powder Optional, for added heat

Preparation

  • Heat oil in a large pan over medium heat.
  • Add raw long-grain white rice and stir for about 3 minutes until it turns slightly golden.
  • If using, add finely chopped onion and minced garlic. Stir again.

Cooking

  • Pour in the can of tomato sauce or blended fresh tomatoes with water.
  • Sprinkle in salt, cumin, and chili powder. Stir to combine.
  • Bring to a low bubble, cover the pan, and let it simmer for 15 to 20 minutes without lifting the lid.
  • At the end of the cooking time, fluff the rice with a fork.

Notes

For added variety, you can mix in peas, carrots, or corn. This dish can be made ahead and stored in the fridge for up to 4 days or frozen for later use.
