  • 10 oz wide rice noodles or fettuccine
  • 1 lb ground beef
  • 1 tbsp vegetable oil
  • 5 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp chili garlic sauce (adjust to taste)
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp brown sugar
  • 2 stalks green onions, chopped
  • 1 tsp sesame seeds (optional)

Preparation

  • Cook the noodles according to the package instructions. Drain them and set aside.
  • In a skillet, heat the oil over medium heat.
  • Add the minced garlic and grated ginger. Cook for about 1 minute until fragrant.
  • Add the ground beef, breaking it up as it cooks. Stir until it is no longer pink.
  • Stir in the soy sauce, hoisin sauce, chili garlic sauce, rice vinegar, sesame oil, and brown sugar.
  • Let the mixture simmer for 5 minutes until it thickens.
  • Add the cooked noodles to the skillet and toss to coat.
  • Garnish with chopped green onions and sesame seeds if using.

Notes

For a lower-carb option, use zucchini noodles instead of rice noodles. You can also add vegetables like bell peppers or broccoli for added nutrition. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
