Ingredients
  

  • 4 flounder fillets
  • 2 cups fresh spinach chopped
  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 1 garlic clove minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Optional: 1/4 teaspoon red pepper flakes

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet and sauté garlic for 30 seconds. Add chopped spinach and cook until wilted. Remove from heat.
  • In a bowl, combine cooked spinach, ricotta, Parmesan, salt, pepper, and optional red pepper flakes.
  • Lay flounder fillets flat and spoon the spinach mixture onto each. Roll them up and place in a greased baking dish.
  • Drizzle lemon juice over the top and cover with foil.
  • Bake for 20–25 minutes or until the fish flakes easily with a fork.
  • Serve warm, optionally garnished with fresh herbs or lemon wedges.
