  • 4 fillets Flounder fillets Fresh and tender for optimal taste.
  • 2 cups Fresh spinach Tender baby spinach is preferable.
  • 1 cup Feta cheese Crumbled for mixing into stuffing.
  • ½ cup Breadcrumbs To bind the stuffing together.
  • 1 teaspoon Paprika For seasoning.
  • 1 teaspoon Greek oregano For added flavor.

Sauce Ingredients

  • 2 cloves Minced garlic To enhance the flavor of the sauce.
  • ½ cup Chicken stock For a rich sauce base.
  • ½ cup White wine Adds brightness to the sauce.

Instructions
 

Preparation of Stuffing

  • Wash and rinse the fresh spinach, then sauté until soft.
  • In a mixing bowl, combine the sautéed spinach, feta cheese, breadcrumbs, paprika, and Greek oregano. Mix until well combined.

Prepare the Flounder

  • Rinse the flounder fillets under cold water and dry them with a paper towel.
  • Season both sides with salt and pepper.
  • Spread the spinach mixture evenly over the fillets and roll them up, starting from the side where the stuffing is.
  • Secure the rolled fillets with toothpicks or kitchen twine.

Baking the Flounder

  • Preheat the oven to 375°F (190°C).
  • Place the stuffed flounder in a baking dish and bake for 20-25 minutes, until the fish is flaky and opaque.

Prepare the Sauce

  • In a small saucepan, combine minced garlic, chicken stock, and white wine. Simmer over medium heat until slightly thickened.
  • Drizzle the sauce over the baked flounder before serving.

Notes

Serve with sides like roasted vegetables, rice pilaf, or a crisp green salad. A Sauvignon Blanc or Pinot Grigio wine pairs beautifully with the dish.
