Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the dry ingredients: flour, baking soda, and salt.
  • In another bowl, whisk together the egg, sugar, vegetable oil, milk, vanilla extract, and mashed bananas.
  • Gradually add the wet mixture to the dry ingredients, stirring just until combined. Be careful not to overmix.
  • If using, fold in the chopped walnuts and cinnamon.

Baking

  • Pour the batter into a greased loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
