Ingredients
  

For the Marinade

  • ½ cup ketchup
  • cup brown sugar, packed
  • ¼ cup soy sauce, all-purpose or light (NOT dark)
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 4 tsp Worcestershire sauce
  • 4 cloves garlic, minced

For the Chicken

  • 700 g chicken thighs, skinless and boneless (Note 1)

Instructions
 

Preparation

  • Mix all the marinade ingredients in a large bowl.
  • Scoop out 1/2 cup of the marinade and reserve for basting.
  • Add the chicken thighs to the bowl and turn to coat well in marinade.
  • Marinate the chicken overnight for best flavor (minimum 3 hours).

Grilling

  • Preheat the grill on medium-high heat.
  • Place the marinated chicken on the grill.
  • Cook the chicken for about 6-7 minutes on each side until fully cooked (internal temperature 165°F/74°C).
  • Baste with the reserved glaze during the last few minutes of cooking.

Notes

For best results, marinate the chicken overnight. Keep an eye on the chicken while grilling to prevent burning due to the sugar in the marinade.
