Ingredients
  

For the crust

  • ½ cup graham cracker crumbs
  • 2 tablespoons melted butter

For the filling

  • 1 package 8-ounce cream cheese Full-fat cream cheese recommended for a rich flavor.
  • 2 cups strawberries, halved Fresh strawberries or thawed frozen strawberries.
  • ½ cup confectioners’ sugar
  • cup milk
  • ¼ cup Greek yogurt Can use dairy-free alternatives.

Instructions
 

Preparation

  • In a small bowl, combine the graham cracker crumbs and melted butter until crumbly and moist. Set aside.
  • In a food processor, blend cream cheese, strawberries, confectioners’ sugar, milk, and Greek yogurt until smooth.
  • Scoop the mixture evenly into popsicle molds, leaving about 1 inch of space at the top for the crust.
  • Press the graham cracker crumb mixture over the top of each mold, gently pressing the crumbs into the batter with your fingertips.
  • Add popsicle sticks to the center of each cup.
  • Place molds into the freezer and let them freeze completely for at least 4 hours.

Notes

Store leftover popsicles in the freezer. Wrap them individually or place in an airtight container. Can last up to two weeks.
