Strawberry Mango Margarita Cupcakes

Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp fine salt

Wet Ingredients

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup caster sugar
  • 4 large eggs
  • 1 cup milk
  • ½ cup fresh strawberry puree Use ripe strawberries.
  • ½ cup fresh mango puree Use ripe mangoes.
  • 2 tbsp lime juice For a stronger lime flavor, add more.
  • 1 tbsp lime zest For garnish.

Preparation

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a large bowl, whisk together the flour, baking powder, and salt.

Mixing

  • In another bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the milk, strawberry puree, mango puree, lime juice, and lime zest.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.

Baking

  • Fill the cupcake liners about 2/3 full with batter.
  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Allow the cupcakes to cool before frosting.

Notes

Store in an airtight container. Best enjoyed fresh, but can last up to three days at room temperature or a week in the fridge. Adding a slice of lime or fresh fruit makes for a beautiful garnish.
