Ingredients
  

Noodles and Sauces

  • 500 g 500 g fresh yellow or white noodles medium thickness
  • 2 tbsp 2 tbsp oil (vegetable, canola, or peanut)
  • 2 tsp 2 tsp sesame oil toasted sesame oil
  • 2 tsp 2 tsp light soy sauce
  • 1 tbsp 1 tbsp dark soy sauce
  • 1 tbsp 1 tbsp oyster sauce
  • 1 tbsp 1 tbsp mirin see substitutes for mirin

Aromatics

  • 8 8 green onions ends trimmed, cut into 7cm / 2.5” lengths, white parts separated from green parts
  • 2 2 garlic cloves finely chopped

Instructions
 

Preparation

  • In a small bowl, mix all the sauce ingredients together.

Cooking

  • Cook the noodles according to the packet instructions. Once done, drain them and give a quick rinse under tap water to prevent them from sticking.
  • Heat oil in a large non-stick skillet or wok over high heat. Add the white parts of the green onions and stir for about 20 seconds.
  • Add the chopped garlic and stir for another 10 seconds until it turns light golden.
  • Add the cooked noodles to the skillet and pour the sauce over them. Toss the noodles for about 1.5 minutes for better flavor.
  • Finally, add in the green onion tops and toss everything together until just wilted, around 20 seconds. Serve immediately.

Notes

These noodles are best served hot and can be garnished with extra green onions or sesame seeds. They pair well with stir-fried vegetables or crispy fried tofu. If storing leftovers, let them cool completely and store in an airtight container in the fridge for up to 2 days.
