Main Ingredients

  • 2 lbs boneless chicken breasts (cut into bite-size pieces)
  • 2 tbsp olive oil For cooking the chicken
  • 1 clove garlic (crushed or 1 tsp. pre-minced garlic)
  • ¼ tsp ginger
  • ½ tsp crushed red pepper flakes Adjust to taste
  • ½ cup apple juice or apple sauce
  • cup brown sugar Adds sweetness
  • 2 tbsp ketchup
  • 1 tbsp cider vinegar
  • ½ cup water
  • cup soy sauce or Yoshida's Gourmet Sauce
  • 2 tbsp Bourbon (optional) Can be omitted
  • to taste Cooked White Rice For serving, use Minute Rice prepared as per instructions

Instructions
 

Cooking

  • Heat oil in a large skillet over medium-low heat.
  • Add chicken pieces and cook until lightly browned.
  • Once cooked, remove chicken from the skillet.
  • Add the remaining ingredients to the skillet, heating over medium heat until well mixed and dissolved.
  • Return the chicken to the skillet and bring the mixture to a hard boil.
  • Reduce heat and simmer for 20 minutes or until thickened to the desired consistency.
  • Serve over hot rice.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Adjust the amount of crushed red pepper flakes to suit your taste. Make sure to cut chicken into uniform pieces for even cooking. If you want to skip the bourbon, the dish will still be delicious.
