Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs (or pie crust)
  • 0.5 cups melted butter
  • 0.25 cups brown sugar

For the filling

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 0.5 cups brown sugar
  • 2 pieces eggs
  • 0.5 cups evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt

For serving

  • Whipped cream or marshmallow fluff Optional topping
  • Chopped pecans Optional topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • In a bowl, mix the graham cracker crumbs, melted butter, and brown sugar together until combined.
  • Press this mixture firmly into the bottom of the prepared pan and bake for about 10 minutes. Let it cool slightly.
  • In another mixing bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until the mixture is smooth.

Baking

  • Pour the sweet potato filling over the crust.
  • Bake for 35-40 minutes, or until the filling is set.
  • Allow the bars to cool completely before slicing. Cut them into squares or rectangles and enjoy!

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze them wrapped in plastic wrap for up to three months.
