  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 12 wonton wrappers
  • ½ cup salsa
  • ¼ cup sour cream
  • ¼ cup diced tomatoes
  • ¼ cup shredded lettuce
  • ¼ cup sliced black olives optional
  • cooking spray

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Spray a muffin tin with cooking spray.
  • In a large skillet, cook the ground beef over medium heat until it is fully browned. Drain any excess fat.
  • Stir in the taco seasoning mix and cook according to the package instructions. Set the mixture aside.
  • Place one wonton wrapper in each muffin cup.
  • Add a spoonful of taco meat, a sprinkle of cheddar cheese, and a small spoonful of salsa on top of the wrapper.
  • Add another wonton wrapper over the top, followed by more taco meat and cheese.

Baking

  • Bake the cups for 15-18 minutes, or until the wonton wrappers are golden and crispy.
  • Remove from the oven and top each cupcake with sour cream, diced tomatoes, shredded lettuce, and black olives, if desired.
  • Serve warm and enjoy!

Notes

Taco Cupcakes are best served warm. Arrange them on a platter for guests to help themselves. They also go well with extra salsa, guacamole, or hot sauce on the side for those who like some heat. You can make mini Taco Cupcakes using a mini muffin tin, adjusting the cooking time to about 10-12 minutes for appetizers.
