  • 1 tablespoon olive oil
  • 1 lb ground beef (or ground turkey) You can substitute with ground turkey if preferred.
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 8 oz spaghetti Any type of pasta can be used.
  • 1 can diced tomatoes
  • 1 cup shredded cheese Cheddar or Mexican blend works well.
  • to taste Chopped cilantro (for garnish)

Instructions
 

Cooking

  • Heat the olive oil in a large skillet over medium heat.
  • Add the ground beef (or turkey) and diced onion, cooking until the meat is browned and the onion is translucent.
  • Stir in the taco seasoning and diced tomatoes, then let it simmer for 5 minutes.
  • Meanwhile, cook the spaghetti according to package instructions.
  • Drain the spaghetti and add it to the skillet with the meat mixture, stirring to combine.
  • Top with shredded cheese and cook until melted.
  • Garnish with chopped cilantro before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can reheat in the microwave or on the stove until warmed through. For an extra kick, add jalapeƱos or hot sauce. Whole wheat or gluten-free pasta can also be used. Consider adding black beans for more fiber.
