  • 8 pieces boneless, skinless chicken breasts
  • ½ cup flour for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup chicken broth
  • ½ cup fresh lemon juice use fresh for best flavor
  • ¼ cup capers adjust to taste preference
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation

  • Season the chicken breasts with salt and pepper, then dredge them in flour.

Cooking

  • In a large skillet, heat the olive oil and butter over medium heat. Add the chicken and cook until golden brown on both sides, about 4-5 minutes per side.
  • Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the chicken broth, lemon juice, and capers. Bring to a simmer.
  • Return the chicken to the skillet and cook for an additional 5 minutes, spooning the sauce over the chicken.
  • Garnish with chopped parsley and serve immediately.

Notes

Serve Tasty Chicken Piccata on a plate with some of the sauce poured over the chicken. Goes well with pasta, rice, or a fresh green salad. Add a slice of lemon on the side for an extra touch of flavor. If storing leftovers, let the chicken cool before placing it in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat gently.
