Teriyaki Salmon Noodles

A delicious and simple dish featuring tender salmon in sweet and savory teriyaki sauce, paired with soft noodles and fresh vegetables. Perfect for a busy weekday or an elegant dinner.

Ingredients
  

For the sauce

  • 2 tbsp soy sauce (light or all-purpose)
  • 2 tbsp mirin
  • 2 tbsp cooking sake
  • 1 tsp white sugar

Main ingredients

  • 2 tbsp oil (vegetable or canola)
  • 250 g / 8 oz salmon fillet (skinless, sliced into 2cm / 0.7" strips, lengthwise)
  • ½ onion (cut into 1cm / 0.3" slices)
  • 1 clove garlic (finely minced)
  • 1 small bunch Chinese broccoli (gai lan, cut into 5 cm / 2" lengths, leaves separated from stem)

Instructions
 

Preparing the sauce

  • In a small bowl, mix the soy sauce, mirin, cooking sake, and sugar until the sugar is dissolved.

Coating the salmon

  • Coat the salmon strips with 1 tablespoon of teriyaki sauce in a bowl. Set aside while you cook the noodles (no need to marinate).

Cooking the noodles

  • Prepare the noodles according to the packet directions. Drain and rinse briefly under tap water, then set aside.

Cooking the salmon

  • Heat 1/2 tablespoon of oil in a large non-stick pan over high heat. Cook the salmon for 1 1/2 minutes on each side or until golden. Remove the salmon to a plate and pour any remaining sauce from the skillet over it.

Cooking the aromatics

  • Wipe the pan with a paper towel and return it to the stove over high heat. Add 1 tablespoon of the remaining oil, then cook the onion and garlic for 30 seconds. Add the Chinese broccoli stems and cook for 1 minute.

Combining ingredients

  • Add the cooked noodles and half of the teriyaki sauce. Toss for 2 minutes until the sauce is absorbed.
  • Add the remaining sauce and toss to combine. Spread the noodles out in the pan and cook undisturbed for about 30 seconds. Repeat this 3 to 4 times (about 3 minutes total) for a nice caramelization on the noodles.

Adding leafy greens

  • Drizzle the remaining 1/2 tablespoon of oil around the pan, then add the Chinese broccoli leaves. Toss for an additional 1 1/2 minutes or until the leaves wilt.

Finishing touches

  • Remove the pan from the stove. Place the salmon on top, breaking it into large chunks, and toss through the noodles.

Serving

  • Divide the noodles and salmon between bowls and serve immediately!

Notes

For garnishing, serve hot with sesame seeds or chopped green onions. You can add chili flakes for a spicy kick. Store leftovers in an airtight container for up to 2 days.
