Ingredients

  • 1 lb 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes optional
  • 1 jar 24 oz marinara sauce
  • 12 oz 340 g pasta (e.g., cavatappi or penne)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley chopped, for garnish

Instructions

  • Cook Chicken: Season chicken pieces with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  • Sauté Garlic and Spices: In the same skillet, add minced garlic, Italian seasoning, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
  • Add Sauce and Pasta: Pour in marinara sauce and add uncooked pasta. Stir to combine. Bring to a boil, then reduce heat to a simmer. Cover and cook until pasta is al dente, about 10-12 minutes, stirring occasionally.
  • Combine Chicken and Cheese: Return cooked chicken to the skillet. Stir in half of the mozzarella and Parmesan cheeses until melted and combined.
  • Top and Melt Cheese: Sprinkle remaining mozzarella and Parmesan over the top. Cover and let sit for a few minutes until cheese is melted.
  • Garnish and Serve: Garnish with chopped fresh basil or parsley. Serve hot.
