- 1 lb 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes optional
- 1 jar 24 oz marinara sauce
- 12 oz 340 g pasta (e.g., cavatappi or penne)
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil or parsley chopped, for garnish
Cook Chicken: Season chicken pieces with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
Sauté Garlic and Spices: In the same skillet, add minced garlic, Italian seasoning, and red pepper flakes. Sauté for 1-2 minutes until fragrant.
Add Sauce and Pasta: Pour in marinara sauce and add uncooked pasta. Stir to combine. Bring to a boil, then reduce heat to a simmer. Cover and cook until pasta is al dente, about 10-12 minutes, stirring occasionally.
Combine Chicken and Cheese: Return cooked chicken to the skillet. Stir in half of the mozzarella and Parmesan cheeses until melted and combined.
Top and Melt Cheese: Sprinkle remaining mozzarella and Parmesan over the top. Cover and let sit for a few minutes until cheese is melted.
Garnish and Serve: Garnish with chopped fresh basil or parsley. Serve hot.
