Ingredients
  

Cake:

  • 2 ½ cups almond flour
  • ¼ cup coconut flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 6 large eggs
  • ½ cup melted butter or coconut oil
  • ½ cup granulated erythritol or preferred keto sweetener
  • ½ cup unsweetened almond milk
  • 2 teaspoons vanilla extract

Frosting (optional):

  • ½ cup softened butter
  • ¼ cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons heavy cream or coconut cream as needed for consistency

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans or one deep 8-inch pan.
  • In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  • In another bowl, beat the eggs, then add melted butter, sweetener, almond milk, and vanilla extract. Mix well.
  • Combine the wet and dry ingredients until a smooth batter forms.
  • Divide the batter evenly between the prepared pans.
  • Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • For frosting, beat butter until fluffy, add powdered erythritol and vanilla, then beat in cream until smooth.
  • Frost the cake once fully cooled and enjoy!
