Cake:
- 2 ½ cups almond flour
- ¼ cup coconut flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 6 large eggs
- ½ cup melted butter or coconut oil
- ½ cup granulated erythritol or preferred keto sweetener
- ½ cup unsweetened almond milk
- 2 teaspoons vanilla extract
Frosting (optional):
- ½ cup softened butter
- ¼ cup powdered erythritol
- 1 teaspoon vanilla extract
- 1 –2 tablespoons heavy cream or coconut cream as needed for consistency
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans or one deep 8-inch pan.
In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
In another bowl, beat the eggs, then add melted butter, sweetener, almond milk, and vanilla extract. Mix well.
Combine the wet and dry ingredients until a smooth batter forms.
Divide the batter evenly between the prepared pans.
Bake for 28–32 minutes or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
For frosting, beat butter until fluffy, add powdered erythritol and vanilla, then beat in cream until smooth.
Frost the cake once fully cooled and enjoy!
