Ingredients
  

  • cups almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup erythritol or keto sweetener
  • 4 large eggs
  • 1 tsp vanilla extract
  • ½ tsp almond extract optional
  • ¼ cup heavy cream

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.
  • In a separate bowl, cream the butter and sweetener until fluffy.
  • Beat in eggs one at a time, then add vanilla and almond extracts.
  • Gradually mix in the dry ingredients, alternating with the heavy cream.
  • Pour batter into the loaf pan and smooth the top.
  • Bake for 40–45 minutes or until a toothpick inserted comes out clean.
  • Cool completely before slicing.
