- 1½ cups almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter softened
- ¾ cup erythritol or keto sweetener
- 4 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract optional
- ¼ cup heavy cream
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.
In a separate bowl, cream the butter and sweetener until fluffy.
Beat in eggs one at a time, then add vanilla and almond extracts.
