Main Ingredients
- 2 lb fresh strawberries ripe, washed and hulled
- 1 cup granulated sugar adjust slightly for sweetness
- 1 tbsp lemon juice fresh
Cooking
Macerate. Toss the hulled strawberries with the sugar and let them sit about 1 hour until juicy.
Boil. Add the lemon juice and bring to a boil over medium high heat, skimming off foam.
Simmer. Reduce the heat and simmer, stirring often, about 30 minutes until thick and glossy.
Test. Spoon a little onto a cold plate. If it wrinkles when pushed, it is set.
Jar. Cool slightly and transfer to clean jars. Refrigerate.
Substitutions: Use thawed frozen strawberries, drained of extra liquid.
Tips: Simmer longer for a thicker jam and shorter for a softer one.
Storage: Refrigerate up to 3 weeks or freeze up to 6 months. This is not a tested canning recipe.
